Jessica
Jessica Sobieski was born and raised in Ocala, Florida, where she has spent most of her life. She married her husband, Michael Sobieski, in 1996, and together they’ve raised two children—Marek, 25, and Ava, 20. Her family remains her greatest joy and the driving force behind her commitment to a life centered around wellness and purpose.
Jessica’s path into chiropractic care and functional wellness has been anything but conventional. It was shaped by personal experience, a passion for healing, and a determination to approach health from a deeper, more meaningful place. Her journey began in her early 30s while working as an office manager for a functionally focused OB/GYN. There, she discovered that it was possible to address health issues without merely masking symptoms with medication—an eye-opening experience that set the foundation for her future work.
She later transitioned into a more progressive healthcare environment focused on peptides, hormone balance, and performance medicine for both men and women. This expanded her perspective on how integrative strategies could be used to restore health and enhance well-being.
At the age of 42, Jessica’s life took a profound turn when she was diagnosed with a rare cancer, leiomyosarcoma. Choosing not to undergo chemotherapy, she instead traveled to a clinic in Mexico operated by a chiropractor who emphasized holistic, patient-centered care. The experience transformed her outlook and strengthened her belief in the body’s natural ability to heal.
Upon returning to the United States, Jessica continued her wellness journey with the guidance of a local chiropractor whose philosophy matched her own. Eventually, she became part of that practice, bringing with her a unique blend of professional expertise and personal insight. Today, she is dedicated to helping others discover a more thoughtful approach to health—one that identifies root causes, supports the body naturally, and redefines what it means to truly feel well.

Katie brings a diverse professional background and a lifelong passion for health and wellness to the Cell-U-Light Therapy Center team. Growing up in Western Massachusetts, she was actively involved in sports and developed an early appreciation for the importance of maintaining an active, healthy lifestyle.
Her career has spanned several fields, including banking management, legal services as a paralegal, and medical office administration. These experiences have strengthened her ability to connect with people from all walks of life and provide compassionate, personalized support to every individual she serves.
Katie’s interest in holistic health began during her teenage years when she experienced significant neck and shoulder pain. Through chiropractic care and physical therapy, she discovered firsthand how the body has an incredible ability to heal when given the proper support. That appreciation grew even more after personally experiencing the aesthetic services offered at the center and seeing the confidence and results, they can bring. She loves being part of that experience for others and helping clients feel comfortable, cared for, and excited about their journey.
Today, Katie is passionate about helping patients navigate their wellness journey and explore innovative therapies that support healing, recovery, and overall well-being. She enjoys educating others about the body’s natural healing potential and is committed to creating a welcoming, supportive experience for every patient who walks through the door.
